Lefay Resort & Spa Lago di Garda Reopens And Launches New Meat Free Restaurant

Lefay Resort & SPA Lago di Garda has opened a new plant and fish based fine dining restaurant that focuses on healthy and sustainable cuisine.   The award-winning eco resort has just reopened following a three-month closure to complete the second phase of an extensive refurbishment and restyling, which included a new room category called ‘Sky Suite’ and a brand new ‘Adults Only SPA’

The new restaurant, ‘Gramen’, which is named after the Latin noun meaning plant or herb, embraces the Lefay Vital Gourmet concept that focuses on the best local seasonal produce together with Italian culinary heritage. The meat free dishes do not include any dairy products or their derivatives.  The interior design of the restaurant aims to reflect the movement and colour of nature.

The menus use plant-based ingredients, inspired by the wild and cultivated herbs grown in the Energy and Therapeutic Gardens, that surround the restaurant, such as lavender, juniper, rosemary, lemon balm and eucalyptus.  Trails guide guests through The Energy and Therapeutic Garden to individual stations where the symbolism of shapes, colours and aromas are combined with recommended balancing exercises, meditation and massages based on the principles of Classical Chinese Medicine.

Executive Chef Matteo Maenza and Resident Chef Giammarco Ninivaggi have created two seven course tasting menus:

PER AGROS

Taken from the Latin meaning “across the fields”, this menu consists exclusively of vegetable ingredients including bottoni pasta filled with artichokes,: asparagus, pine nut béchamel and green sauce and black spaghetti, carrots and plankton. This menu draws direct inspiration from the resort’s Energy and Therapeutic Garden and its aromatic plants.  This menu costs Euros 100 per head plus Euros 75 for wine pairing.

PER AQUAM

Taken from the Latin meaning ‘through water’, this menu is a tribute to the Mediterranean climate of Lake Garda and consists of vegetable and fish dishes including roots, oyster, green apple and fennel: rice, baby squid, peas and wild mint and sea bass, wood sorrel and caviar.   This menu costs Euros 140 plus Euros 85 for wine pairing.

The restaurant also offers an à la carte menu.  ‘Gramen’ joins ‘La Limonaia’ the resort’s main restaurant, that serves breakfast, lunch and dinner exclusively to guests staying at the hotel. Here the focus is on traditional Italian dishes with a Mediterranean touch and healthy Lefay SPA recipes.

Combining privacy and relaxation, the three new Sky Suites, immerse guests in nature with views over the lake and sky. The large 134-square-metre Suites combine private space with wellbeing and feature a living room, private sauna and a spacious panoramic terrace with outdoor heated Jacuzzi.

The new “Adults Only SPA” is a light and airy place where those aged 16 and over can revive themselves.  The new space has a large whirlpool overlooking Lake Garda, a Finnish sauna and  relaxation loungers making the most of the view,. There is also be a new Fitness Area with new Technogym Artis equipment and a renovated pool bar overlooking the infinity swimming pool.
